Hokkaido scallops are carefully harvested by licensed divers in designated coastal zones. This method protects seabeds and ensures only mature scallops are selected.
Immediately after harvest, scallops are chilled on board to preserve sweetness and texture. Temperature is tightly controlled to maintain sashimi-grade freshness.
In HACCP-certified facilities, scallops are shucked, cleaned, and graded by size. Roe is removed for sashimi-grade products, ensuring purity and consistency.
Prior to delivery, scallops are prepared to your specifications: Whole in Shell, Shucked Meat, or IQF Portions, enabling seamless use for sushi bars, fine dining, and retail.
