Why is Tuna Meat Bright Red and Highly Nutritious?



Unlike typical white-fleshed fish, tuna must swim continuously without stopping (even while sleeping) to ensure their gills and bloodstream receive a constant supply of oxygen. As a result, their muscle tissues are rich in myoglobin, an oxygen-binding protein that gives the meat its distinct, deep red color, similar to beef.
